500g dark chocolate

400g caster sugar

100g cocoa powder

300g plain flour

400g butter

500g cooked beetroot

6 eggs

Vanilla extract


  1. Melt the chocolate and butter in a bowl over simmering water.
  2. Puree cooked beetroot in a processor, then add eggs added, one at a time, followed by the vanilla and sugar.
  3. Mix all until smooth.
  4. Sift cocoa and flour in a separate bowl.
  5. Stir in the beetroot mix with the melted chocolate, then fold in the dry ingredients.
  6. Bake brownies at 180 degrees C for around 30 to 35 minutes - be careful not to overcook them.
