Ingredients (serves 4)
1 Swede (medium)
1oz butter / margarine
A pinch of salt
Handful of fresh herbs (optional)
2oz Mature Cheddar
1 tsp sesame & pumpkin seeds

Method
Preheat oven to 200C
Peel Swede & chop to 1” chunks
Boil in large pan for 15-20 minutes, until soft
Drain and mash it with butter.
Add herbs and season to taste.
Put in an oven proof dish and sprinkle on cheese, then seeds.
Bake for 20 minutes until cheese is bubbling.
