Ingredients

3 eggs
½ tsp salt
2.5 oz oil or melted butter
1 tsp soda
10oz grated carrot
1 tsp baking powder
10oz plain flour  
1 tsp cinnamon
5oz  brown sugar (or 3oz honey)

Method

  1. Mix eggs, oil, carrot, and honey if used.  
  2. In a separate bowl combine flour, salt, soda, baking powder, cinnamon, and sugar if used.  
  3. Sift dry mixture into wet mixture.  
  4. Stir slightly to blend.
  5. Pour into greased and floured loaf pan.  
  6. Bake at 350F for 1 hour.  
Note: for ultimate luxury add 5oz of raisins, 5oz chopped nuts and 10 ozs grated coconut.
